Why are fermentation weights used?
Weights are used to keep the fermenting vegetables below the brine. This is important because exposure to air can lead to bad bacteria growth. To use the weights, simply place the vegetables in a wide mouth jar according to recipe instructions, cover with the brine solution, and place the weight over the vegetables.
